Countdown to weekend, however, we see some of you are in the midst of harvesting gorgeous aromatics these days! Let’s put Lavender on our table today, as our AROMA KITCHEN section in the Summer issue has some great recipes there. We invite you to prepare these fantastic Chai Latte Rolls with Lavender, a colourful creation from our culinary guide Mariann Beh, who is an Agricultural Biotechnologist MSc, grows medicinal and herbal plants in her garden in Hungary, where she is using them as ingredients as she makes teas, pestos, jams, herb and spice sauces. On her workshops at Bazsalikomos kert she teaches everyone to create unique and healthy treats.

CHAI LATTE ROLLS WITH LAVENDER
(for approx. ten rolls)
INGREDIENTS for The Rolls
• 500 grams of cottage cheese
• 100 grams of icing sugar
• 100 grams of soft butter
• 100 ml milk
• 500 grams of baking flour (type 55)
• 50 grams melted butter
• 200 grams of icing sugar
• 1 tablespoon ground cinnamon
• 1 teaspoon of Lavender powder (see box at bottom right)
• 1 teaspoon ground cardamom
• 1 teaspoon ground cloves
• 1 teaspoon ground ginger
INGREDIENTS for The Icing
• 200 grams of icing sugar
• 2 tablespoons of water
• 1 tbs raspberry powder (optional)
METHOD
Mix the cottage cheese and icing sugar until creamy, and add the cubed butter and milk. Stir the baking powder and salt into the flour, then continuously add to the cottage cheese mixture. Knead the dough thoroughly and then divide it in two. On a lightly floured surface, stretch one portion of dough into a rectangle about 5 mm thick and brush with half of the melted butter. Mix the icing sugar thoroughly with the ingredients and sprinkle over the dough. Roll up the dough starting from the thinner side and cut 2-3 cm slices with a sharp knife. Place the rolls on a baking tray lined with baking paper and gently flatten them with the palm of your hand to a height of 1 centimetre. Bake in a pre-heated oven at 180°C for 10-12 minutes until golden brown. Mix the icing ingredients until runny and drizzle over the rolls when serving.
